Recipe of the Week: Skillet Roasted Bacon Garlic Yukons



A few weeks ago, the culinary talent over at Insatiably Epicurious introduced this recipe by disclosing that she and her 6 year old engaged in an unspoken race to see who could eat more spuds.  Intrigued, I continued studying the recipe.  Potatoes?  Always a good thing.  Garlic?  Lovin' it.  Bacon?  SOLD.

All three ingredients together?  HEAVEN ON A FORK!

Ok, so that may be a tad bit over the top but only a tad...because even before you sink your teeth into the pillowy soft goodness known as yukon potatoes after they've been introduced to bacon fat during the roasting process, your olfactories are assaulted (in a good way!) by the comforting smells of bacon and garlic.  As I was about to pull the skillet of goodness out of the oven, my husband arrived home from work and immediately exclaimed, "That smells GOOD!"

That first bite?  Wildly delicious beyond imagination.  3 ingredients - so simple yet oh so packed with flavor!  Easily a staple dish for any gatherings.

Skillet Roasted Bacon Garlic Yukons

Special Equipment:
           skillet
Ingredients:
1lb yukons- peeled and quartered
4 slices thick cut hickory smoked bacon- sliced
4 cloves garlic- smashed
½ tsp sugar
2 tsp kosher salt
Fresh ground pepper

Directions:
  1. Place skillet in oven and preheat at 400 degrees.
  2. Set a medium pot of water to boil. Add about a tsp of kosher salt into the water.
  3. Once water comes to a boil, add potatoes. Loosely cover and boil for about 5min. Drain in colander and set aside.
  4. Once oven is preheated, add bacon into skillet. Close oven door and let cook until translucent, for about 3-5min.
  5. Carefully pour out bacon grease into a small bowl. Set aside the bacon in a separate bowl.
  6. Place potatoes into skillet and toss with sugar, 1 tsp salt, fresh ground pepper, and 2 tbsp of bacon grease. Toss thoroughly. Tuck in smashed garlic in various parts of skillet in between pieces of potato. Spread bacon evenly throughout skillet.
  7. Place skillet in oven and roast for about 15min. Remove and flip over pieces of potato so that you get it crispy on both sides. Place back into oven and roast for another 10min or until golden.
  8. Taste and add more seasoning if necessary. Serve immediately.
